Growing up, especially around the holidays, my Mema (my grandma) would make homemade cinnamon rolls and it's such a nostalgic thing and smell for me. Cinnamon rolls, pre gluten free life, are one of my favorite things on planet earth. Cinnamon rolls are labor intensive though and these pancakes totally hit the craving perfectly. Paired with a warm and spiced cinnamon apple makes these gluten free pancakes one of my favorite things. These are perfect for a cold Saturday morning - only thing that would make these even better is paired with a little snowfall and a lit fireplace!
What You'll Need:
• 1 cup Bob's Red mill 1:1 gluten free flour
• 1 tsp baking powder
• 1/2 tsp baking soda
• Dash of salt
• 1 tsp cinnamon
• 2 tsp vanilla
• 1 egg
• 1/2 cup unsweetened almond milk (I use Malk) + 1 tbsp (regular milk is fine too!)
• 1 apple
• 2 tbsp butter
• 2 heaping spoonfuls brown sugar
• 1 tbsp cinnamon
• Dash of allspice
• 1 cup powdered sugar
How To:
≥≥ In a bowl, combine your flour, baking powder, baking soda, salt and cinnamon. Mix together. Then add in 1 teaspoon vanilla, egg and almond milk. Stir to combine. Add a splash more of milk if needed until it's pancake consistency.
≥≥ Peel and dice up your apple into small 1/8 inch cubes. In a pan on the stove, heat up your butter, apple, brown sugar, cinnamon and all spice. Let everything melt and combine until it's caramelized apples. You want the apples to still have a bit of a crunch - not completely soft.
≥≥ Add in half of your apple mixture to the batter and fold in until combined. Save the other half of the apple mixture for in a bit.
≥≥ In a bowl, mix together powdered sugar, 1 teaspoon vanilla, a splash of cinnamon and a tablespoon of milk. Add in more milk as needed. Stir to make a cinnamon glaze.
≥≥ In a greased skillet, add in your pancake batter and make your pancakes! Cook until browned.
≥≥ Stack them up! Top with your remaining apples, butter and a drizzle of the cinnamon glaze.
