APPLE CINNAMON TURNOVERS


Going gluten free - it can oftentimes feel like everyone can eat things you can't and it's not a great feeling. One thing I missed a lot were apple turnovers. I made them with my dad, growing up, and it's one of the best memories. The smell of the warm apples and spices with butter and watching the puff pastry rise up in the hot oven. Nostalgia. So I knew I needed to figure out a way to make these for us, gluten free style. Schär saved the day with their gluten free puff pastry on this one! You'll find it in the frozen section of your grocery store. These are delicious as a dessert or for breakfast with a cup of hot tea!



What You'll Need:

• 1 roll Schär puff pastry

• 1 apple

• 3 tbsp brown sugar

• 2 tbsp butter

• 1 egg

• 1 tbsp cinnamon

• 1/4 tsp all spice

• Dash of salt

• Non-stick spray

• 1 cup powdered sugar

• Vanilla

• Milk or Non-Dairy Milk


How To:

≥≥ You'll need to thaw out one roll of puff pastry. Once it's thawed out - unroll it and it might crack or crumble. That's ok! Simple push it back together and push down with your fingers until it's whole again. Lay it flat and cut once hamburger style and then make 3 cuts in the opposite direction making 4 rectangles on top and 4 on bottom. You should have 8 pieces.


≥≥ Preheat the oven to 400º F.


≥≥ The filling: peel your apple and dice it into small 1/4 inch cubes. They need to be small enough to fit inside the puff pastry rectangles.


≥≥ In a pan on medium low heat, melt 2 tablespoons of butter. Add in your apple, brown sugar, cinnamon, all spice and dash of salt. Cook for about 5-7 minutes. Stir every so often. You don't want them to be mushy, you still want them to have a bite to them. They will cook longer in the oven.


≥≥ Spray your cookie sheet with non-stick spray, I like avocado oil spray. Lay down four of your puff pastry rectangles spaced out. Fill the center of them with a spoonful of the warm apple mixture. Place the matching rectangle on top and mash down around all 4 sides with a fork creating a seal. Use a knife and cut a slit in the top piece for ventilation.


≥≥ Mix one egg in a bowl. Brush on top of each of your four puff pastries. Sprinkle the top with cinnamon. Get into the oven and cook for 15-20 minutes or until your puff pastry is golden brown and apple mixture is bubbling.


≥≥ For the glaze: In a separate bowl, mix your powdered sugar, a dash of cinnamon, a splash of vanilla and milk. I use unsweetened almond milk. Start small on your milk and you can add as you go. You don't want it too runny. Try a tablespoon at first and go from there. Mix until it's the consistency of a thick glaze.


≥≥ Once your pastries have cooled - drizzle with the cinnamon vanilla glaze.
