AU GRATIN CREAMED CORN



One thing you should know about me is I'm a sides girl! I love all sides and typically make them my main meal, if we're being honest. When I'm out and about to eat - I'll often order 3 sides as my meal. I love sides THAT MUCH. This side dish is a part of a series I'm doing for the holidays to show you my favorite gluten free side dishes that will wow your guests! Not only that, but they are soooooo delicious. This creamed corn is full of flavor and anything but your typical steakhouse creamed corn that is just corn and heavy cream - BORING. This gluten free side dish is made without heavy cream, flour or a roux and you'd never know it. Give it a try and let me know what you think!



What You'll Need:

• 1/4 sweet onion, diced

• 3 cloves garlic, diced

• 1 1/2 cup fontina cheese

• 1 1/2 cup white cheddar cheese

• 1 cup fresh Parmesan shredded

• 4 oz cream cheese

• 2 tbsp butter

• 16 oz bag frozen corn

• 1 tsp sage

• 2 tsp onion powder

• Salt & pepper

• Whole Milk

• Avocado Oil

• Chives, for garnish


How To:

≥≥ Preheat the oven to 400º F. In a pan on the stove, heat up some avocado oil and brown your onion and garlic together. Once softened and browned, remove from the pan and save for in a bit.


≥≥ In the same pan, melt your butter. Add in a cup of fontina, a cup of white cheddar, a 1/2 cup of Parmesan and 4 ounces of cream cheese. Add in a splash of milk, water or broth to help it melt. Add in your sage, onion powder, salt and pepper. Once melted together - you're going to add this mixture to a blender and create emulsified magic! Blend together for a few minutes until completely smooth. Pour back into the pan - it's going to be thick and creamy!


≥≥ Add in about 1/2 cup of milk and combine together. Add in your package of corn and stir. Add a little more milk if needed. You still want it to be creamy, but pourable. Add your onions and garlic back into the cheesy corn.


≥≥ Grease a baking dish, preferably 9x9 or smaller. Add in your cheesy corn mixture. Top with the remaining cheese you have. Cook for 15-20 minutes or until bubbling. Turn the oven on broil and broil the top for just a couple of minutes, watch it closely! This will brown the top and it's done! Top with chives if you'd like!
