This is a seriously sweet and scrumptious side! It's perfect to make during the holiday season. I love it so much and it could honestly probably pass as dessert, but we won't talk about that :) Sweet potatoes are one of the greatest vegetables on planet earth and this dish is sure to wow your guests. It's easy to make and is a show-stopper.
What You'll Need:
• 3 sweet potatoes
• 3 tbsp butter
• 1/3 cup brown sugar
• 1 tsp cinnamon
• 1/2 tsp ginger
• 1/2 tsp all spice
• Sprinkle of salt
• 1 package mini marshmallows
How To:
≥≥ In a bowl, make your sauce. Melt your butter and brown sugar for 30 seconds-1 minute in the microwave. Add in your spices and a sprinkle of salt.
≥≥ Preheat your oven to 375º. Wash your sweet potatoes and I like to keep my skin on my sweet potatoes for texture but you can peel them if you like! Slice them very thin.
≥≥ Group your potato slices into stacks and layer around the pan in a spiral until you end up at the middle and use all of your potatoes. Give them one last sprinkle of salt. Get it into the oven uncovered for 35-40 minutes.
≥≥ Once cooked through, top your mini marshmallows on top. You might not use the whole bag. Get it back into the oven and broil for a few minutes but watch closely so they don't burn. You want them golden brown and toasted!
