Gluten free Mac and Cheese is rare to come by that doesn't have a gritty cheese sauce or is mush when all is said and done - but this recipe is anything but that! It's so full of flavor and the perfect bite on the pasta will make this one of your quick favorites! An added bonus - this recipe is packed with protein and doesn't come with the typical heavy cream you find in most recipes so it is a tad easier on the tummy. But rest assured - it's insanely creamy. This is great as a main or as a side dish paired with my Buttery Herb Roasted Chicken.
What You'll Need:
• 3 cups gluten free spiral pasta (this is my favorite brand)
• 1 cup extra sharp cheddar cheese
• 1 cup smoked Gruyere cheese
• 1 cup Fontina cheese
• 1 cup fresh shaved parmigiana reggiano (split into 1/2 cups)
• 3 tbsp melty cheese (laughing cow or cream cheese)
• 2 tsp yellow mustard (trust me on this!)
• 3 tbsp butter
• 1 tsp onion powder
• 1 tsp garlic powder
• 1 cup gluten free bread crumbs
• Chicken Bone Broth
• Pasta Water (save from boiling your pasta)
• Salt & Pepper to taste
How To:
>> Heavily salt a pot of water to boil your pasta in. Tip: when making pasta - the water should taste like the ocean! Boil the pasta til al dente (not completely done) and save the water, please!
>> Shred your cheeses (minus the melty cheese) and set aside.
>> In a pan, melt 2 tablespoons of butter. Once melted, add in a splash of chicken bone broth so the cheese doesn't stick. Add in your cheeses (1/2 of the parm) and let it melt together on low. Stirring occasionally to combine. Once melted, add in your seasonings to taste and your mustard. Mix together. To thin out the melted cheeses, add in as much chicken bone brothas you think it needs - roughly 1/2-1/4 cup and 1/4 cup of pasta water. It won't look like traditional cheese sauce, it may be a little clumpy.
>> This is where the magic happens! Add in the sauce mixture into a blender and blend on high speed for at least 2 minutes to emulsify.
>> Pour the creamy cheese sauce back into your pan, taste and adjust seasonings as needed. If it's a little thick - add in more bone broth until you find the right consistency for your Mac and cheese. Pour in your noodles and mix!
>> Toast 1 tablespoon of butter and your gluten free bread crumbs in a pan. Spray a baking dish with avocado oil or non-stick cooking spray.
>> Pour mixed Mac into pan and top with toasted bread crumbs and remaining Parmesan. Broil on high for a few minutes until it's golden brown. Watch closely so it doesn't burn!
