Did you know most store-bought pickles are full of artificial flavors and dyes? Not good and definitely not good for you. If you have cucumbers in the fridge you need to use up - this quick 5-minutes recipe is for you! It's so delicious and bright! This recipe is also super customizable. You can change the flavor with a few seasonings or spices. Use your judgement on flavor, too. If you want a little more spice after you taste them - throw in some extra red pepper flakes. If you like a little saltier pickle, increase the salt. If you like sweet pickles - up your honey amount! They are delicious to eat straight out of the bowl or pair with any dish.
What You'll Need:
• 2 English cucumbers
• 1/4 sweet onion, sliced thin
• 4 cloves garlic, peeled
• Couple sprigs of fresh dill
• 2 tsp salt
• 1 tbsp dried dill
• 1 tbsp whole black peppercorn
• 2 tbsp pickling spice
• 1 tsp red pepper flakes
• 1 tsp onion powder
• 3 tbsp honey
• 1-2 cups distilled white vinegar (apple cider vinegar is great too)
• 1/4 cup filtered water
How To:
≥≥ Grab a sealable container. I love glass containers with lids personally so my pickles aren't sitting in plastic, but anything will do! Slice your cucumbers thin into 1/4 inch or a little less slices. Get them into the bowl. Add in your thinly sliced onion, garlic cloves and fresh dill.
≥≥ In a pan on the stove, add in your vinegar. Use enough to completely cover your cucumbers. The amount will vary based on how many cucumbers you use. Start with a cup of vinegar and go from there. Add in your water, salt, dried dill, whole black peppercorn, pickling spice, red pepper flakes, onion powder and honey. Bring that to a slow boil. Once it's a low boil, turn off the heat and pour the vinegar spice mixture over the bowl of your cucumbers, onion and garlic.
≥≥ Get the lid on and put the bowl in the fridge for a couple of hours to marinate. A minimum of 30 minutes but the longer the better! Enjoy for up to a couple of weeks!
