HONEY LEMON PEPPER GLAZED BRUSSELS WITH A ROASTED ONION AIOLI



If you aren't a fan of Brussels sprouts, there's a good chance you aren't making them right. They NEED to be crispy and they need to have a lot of flavor! These are so light, bright and crispy - making them a perfect accompaniment to any meal! The roasted onion aioli is the perfect dipping sauce and honestly a great dipping sauce for a lot of things like fries, potatoes, chicken or sandwiches!



What You'll Need:

• 1-2 lbs Brussels sprouts

• Avocado oil

• 1 tbsp butter

• 2 tbsp honey

• 1/2 lemon, juiced

• 1/2 cup mayo

• 1/3 sweet onion

• 2 cloves garlic

• Olive Oil

• Salt & Pepper


How To:

≥≥ Clean your Brussels and remove any "grossness", and slice in half. Heat up a skillet or cast iron with some avocado oil, roughly 2 tbsp. Once the pan and oil are hot - place your Brussels face down on the flat side. Sprinkle with salt and pepper. Leave these be to crisp up and get brown.


≥≥ Let's make the glaze. In a pan, heat together your butter, honey, lemon juice, and a good helping of pepper and salt to taste. Melt this together and set to the side.


≥≥ In another pan, roast your onion and garlic with a little avocado oil. Let it get brown and roasted. In a blender, blend together your mayo, roasted onion and garlic, a dash of olive oil and a splash of lemon juice. Salt and pepper to taste.


≥≥ Once the Brussels are close to being done (we want them crispy!), toss with your glaze to coat. Pull them off the heat and serve with your roasted onion aioli!
