There's just something about roasted carrots on a serving platter that are a touch of elegance and comforting all at the same time! These carrots are minimal effort and so delicious for any occasion. I love the touch of sweet and heat with the herby sage. These are a part of my Seriously Scrumptious Sides series that you can make for the holiday season or really any time. For a long time in my gut healing journey, I couldn't eat carrots. Whether they were raw, baked, steamed - whatever - my body did not like carrots. It was devastating! After years of not eating them, I slowly reintroduced them and I am completely A-Okay with carrots now, which makes my heart so happy - because I LOVE carrots! All this to say - if you're somewhere on your healing journey - there may be foods you have to give up for a little while, but just know it doesn't always mean forever.
What You'll Need:
• 8-12 medium sized whole carrots
• 3 tbsp honey
• 3 tbsp butter
• 1 tsp sage
• 1 tsp smoked paprika
• 1 tsp onion powder
• 1/2 tsp cayenne
• Salt & pepper
• Avocado Oil
• Fresh Sage, for garnish
How To:
≥≥ Preheat your oven to 400º F. Wash and peel your carrots. I leave the tops on mine, but you don't have to!
≥≥ Get them onto a greased baking sheet and rub with avocado oil. Sprinkle a little sage, smoked paprika, onion powder, salt and pepper. Use your judgement. You don't want them drenched, but flavorful.
≥≥ Roast your carrots for about 40 minutes or so. Flip over halfway through, around the 20 minute mark. You want them to be soft, but not mush.
≥≥ In a bowl, melt your butter, honey, sage, smoked paprika, onion powder, cayenne salt and pepper together. Drizzle 3/4 of your sauce over the carrots and coat. Pop back in the oven for 3-4 minutes or so and plate them up! Drizzle with your remaining honey butter and top with fresh chopped sage.
