Baked not fried but even more delicious - these are about to be your new obsession! The crunchiness with a little sweet and a little heat paired with the creamy cheesy mashed potatoes is all a match made in heaven. I also love that these are warm and hearty without being fried. This dish is the epitome of you don't have to miss out on good food, just because you're gluten free! I hope you love it as much as me!
What You'll Need:
• 2 russet potatoes
• 2-3 chicken breasts
• Chicken Bone Broth
• 3 cloves garlic, chopped
• 3 tbsp sour cream
• 1 pound okra
• 2 cups gluten free corn flakes (I like Nature's Path Organic)
• 1 egg
• 1/2 cup gluten free flour
• 6 tbsp butter
• 3 tbsp honey
• 1 tsp crushed red pepper
• 1 tsp onion powder
• 2 tbsp Franks Red Hot sauce
• 1 cup white cheddar
• Avocado Oil
• Salt and pepper
How To:
≥≥ Let's make some mashed potatoes first! Wash, peel and dice your russet potatoes into even sized cubes. Get into a pot and fill just over the potatoes with chicken bone broth. Water is fine too, it's just a little less flavorful. Add your 3 cloves of garlic and salt and pepper. Put the lid on and bring to a boil. Continue boiling until potatoes are soft too the touch of a fork going through them. Drain the broth and add in 3 tablespoons of butter, your sour cream, and white cheddar. Whip until there are no clumps, but don't over whip to where they become glue! Keep the lid on and set to the side.
≥≥ Heat your oven to 400º F. Wash your okra and cut in half long wise. On a greased baking sheet, please them cut side down and sprinkle with avocado oil ,salt and pepper. Bake for 10-15 minutes or until browned. Don't overcook these to where they are mush - you want a crunch to them!
≥≥ For the chicken: Take your chicken and dice it into 2-3 inch chunks. Oversized nuggets sort of. Take your corn flakes and crush them up. This can be done in a food processor or in a baggie with a rolling pin or canned good. Take three plates and place your flour on one, scrambled up egg on one, and crushed corn flakes on one. Coat your chicken with flour, then egg, then corn flakes. Press the corn flakes onto the chicken so they hold. Get the coated chicken onto a greased baking sheet spread apart by a few inches. Drizzle with avocado oil and salt and pepper. Get them into the oven for 15-20 minutes or until the chicken reaches 165º F internally.
≥≥ While the chicken is cooking, in a pan melt together Franks Hot Sauce, 3 tablespoons of butter, crushed red pepper, onion powder, honey, salt and pepper.
≥≥ Once your chicken is almost done - pour the melted hot honey butter over the chicken (reserve a couple tablespoons in the pan before you pour it) and put the sheet of chicken back into the oven for a few more minutes.
≥≥ Plate it up! Make a bed of mashed potatoes, top with your crunchy chicken nuggets, some okra and drizzle with a little more of your reserved hot honey butter.
