KISS ME SALAD WITH A FIG VINAIGRETTE



Fair warning: your person might want to marry ya if you make this salad! We're on part 6 of my Valentine's Dinner series. This one comes together in no time and the fig vinaigrette is chef's kiss! The whole salad is light and bright which makes it the perfect accompaniment to everything we've made so far!



What You'll Need:

For the salad:

• Arugula and Spinach Mix

• Red Onion, sliced thin

• Feta Cheese, crumbled

• Pomegranate Seeds

• Walnuts, chopped

• Prosciutto, torn into pieces

• 1 Pear, sliced


For the dressing:

• 1/4 cup champagne vinegar

• 2-3 tbsp fig preserves or jam

• 1/4 cup olive oil

• 1 tsp honey

• Salt & pepper


How To:

≥≥ In a large mixing bowl, combine your salad ingredients. I didn't put measurements on the salad part, because it's really about how much you prefer of each item and how many people you want to serve. There's no rules here, have fun with it!


≥≥ In a separate bowl or shaker, combine the champagne vinegar, fig preserves, honey, salt and pepper. Stir to combine. If your fig preserves has a lot of sugar in it, you may be able to omit the honey part because it will already have sweetness to it. Once combined, quickly whisk in your high quality olive oil.


≥≥ Drizzle desired amount of the fig vinaigrette over your salad and mix!
