I've partnered up with al fresco's chicken sausage to bring you my delicious version of lasagna soup, but better for you! You don't need a block of cream cheese or heavy cream to make your lasagna soup tasty. This lasagna soup is protein-packed, full of good-for-you ingredients and only takes 30 minutes. Al fresco's chicken sausages are made with real ingredients you can actually see, which is so important to me. I'm using the Chicken Parm Sausages from the Tastes Just Like Products which is packed full of mozzarella, parmesan, Romano cheeses, sun-dried tomatoes, garlic and basil. They're so good, you guys! They have so many great flavors, so be sure to check them out. Their roasted garlic, sun dried tomato, or sweet Italian would also be great in this soup. This soup has become a new favorite in my house and I know it will yours, too!
What You'll Need:
• 1 package al fresco's chicken sausage
• 1/2 sweet onion, diced
• 5 cloves garlic, chopped
• 1 can crushed tomatoes
• 1 can tomato sauce
• 1/2 cup fresh basil
• 1/2 cup fresh shredded Parmesan
• 2 handfuls fresh spinach
• 1 Parmesan rind
• 1 1/2 tsp oregano
• 1 tsp onion powder
• 1 tsp sage
• 1/2 tsp red pepper flakes
• Salt & pepper to taste
• 5-6 gluten free lasagna noodles
• 4 cups chicken bone broth
• Olive oil
How To:
≥≥ Dice your onion small and chop your garlic. Take four of the al fresco's chicken sausages and slice long way in half, then chop from there into slices. Chop up your fresh basil and shred your parmesan.
≥≥ In a pot, heat some olive oil and sauté your onion. Add in your sausage and let it get caramelized. Next add in your garlic and let it get fragrant for a few.
≥≥ Add in your cans of tomato sauce and scrape the sausage bits off the bottom of the pan, there will be a lot of flavor in there! Add in your spices, salt and pepper, basil, and parmesan. Stir together and let it get fragrant for about five minutes. Add in your chicken bone broth and stir to combine.
≥≥ Bring to a light boil. Break up your lasagna noodles by cracking them into chunks with your hands, and toss into the lasagna broth. Boil until noodles are soft and serve!
≥≥ I topped mine with the 5th sausage crumbled and crisped up. I added parmesan crisps and a pesto drizzle.
