LOADED CAJUN RICE


This Loaded Cajun Rice is warm and hearty with a little kick! Being from the semi-south, (do you consider Oklahoma in the south?), we cook a lot of southern meals and this one definitely makes the list. I personally love okra and will eat it in just about any form: baked, fried, or pickled. I learned from one of my favorite food creators, The Defined Dish, that baking the okra before you put it into any recipe, takes away the sliminess. If you like a little heat, I think you'll love this one. It's great as a main dish or can be served as a side dish.



What You'll Need:

• 1 cup white rice

• 2 cups chicken bone broth

• 4 cloves garlic, chopped

• 2 tbsp cajun seasoning

• 2 heaping spoonfuls tomato paste

• 2 stalks of celery

• 1/3 green bell pepper

• 1/3 red bell pepper

• 2-3 chicken sausages

• 1/2 lb okra, fresh

• Fresh parsley for garnish

• Avocado oil

• Salt & pepper


How To:

≥≥ Preheat the oven to 400º F and let's start on the rice. Heat up about a tablespoon of avocado oil in a pan and add your washed white rice. Toast the rice up, add in your chopped garlic and let it get fragrant. Add in your cajun a tablespoon and a half of cajun seasoning and your tomato paste. Let it toast for about 2 minutes and then add in 2 cups of chicken bone broth, stir, salt and pepper it and put the lid on. Cook according to package instructions.


≥≥ Chop up the veggies! Finely dice your celery, red and green bell pepper. Cut your okra into 1/4 inch pieces or so. Chop up your chicken sausage. I half mine long ways and then cut on an angle so you have angled chunks of sausage.


≥≥ On a greased baking sheet, add your okra. Bake for 10-15 minutes or so until lightly golden brown and no longer slimy. You don't want them mushy, you still want a bite on the okra.


≥≥ In a pan on medium to medium high heat, add in some avocado oil, add in your celery, bell pepper and sausage. Brown it until a golden brown. Coat the mixture with about a 1/2 tablespoon of cajun seasoning, salt and pepper to taste.


≥≥ Once the rice is done, add it to the pan of your veggies and sausage. Add in the baked okra and mix to combine.


≥≥ Garnish with fresh parsley and your favorite hot sauce for a little extra heat!
