I love Cava, but I love these even more. Lots of spices in this one and the flavors are actually insane (in the best way!). Spices really make any dish in my opinion, so if you don't have a ton at home to choose from, I highly recommend if you can grab a new spice every other trip to the grocery store and start building your bunch - you'll be set for some great eatin'! I love to make these for a meal prep option for the week. You can quickly build-a-bowl for lunch or dinner. It's super delicious and better for you than takeout.
What You'll Need:
For the chicken:
• 2 chicken breasts
• 3 tbsp olive oil
• 3 tbsp balsamic vinaigrette
• 1 tbsp dried dill
• 1 tsp onion powder
• 1 tsp dried oregano
• 1 tsp smoked paprika
• 1 tsp turmeric
• 1 tbsp honey
• Salt & pepper
For the rice:
• Make my Greek Garlic Lemon Herb Rice or any rice is fine!
For the Tzatziki:
• 1/2 cup plain greek yogurt
• 1/3 cup English cucumber, chopped finely
• 2 cloves garlic, chopped finely
• 1/2 lemon, juiced
• 2 tbsp fresh dill
For the Mediterranean salad:
• 1/2 cup English cucumber, quartered
• 1/2 cup cherry tomatoes, quartered
• 1/4 cup crumbled feta
• 1 tsp onion powder
• 1 tsp dried dill
• 1 tsp oregano
• Salt & pepper
• 3 tbsp red wine vinegar
How To:
≥≥ Let's get the chicken marinating! Get everything into a bowl or baggie to marinate for at least 30 minutes, but the longer the better!
≥≥ Get the rice going. I love my Greek Garlic Lemon Herb Rice in these! Or you can cook any kind of rice according to your package instructions.
≥≥ Next, make the Mediterranean salad! It's my favorite! It's so fresh and bright. Combine everything into a bowl and mix.
≥≥ Let's make the Tzatziki! Combine everything into a bowl and mix well. The flavors are *chefs kiss*!
≥≥ Cook your chicken in a cast iron over medium high heat, grill it, or bake it in the oven until chicken reaches 165º F internally. Let rest for 5 minutes and slice into thin strips.
≥≥ Assemble your bowls! Rice, then chicken, Mediterranean salad, Tzatziki, and I love my pickled red onions on this bowl! If you have any hummus in the fridge, I love to throw a dollop of that on, too!
