PICKLED RED ONION



Crunchy, a little tang, a touch of sweet - these 5-minute gluten free pickled red onions are the perfect topping for just about everything. If you aren't a raw onion fan - pretty please (with sugar on top) give these a try. Even as someone who cooks a lot, I'm still not the biggest fan of raw onions by themselves and I will eat these like popcorn. I snack on them by themselves or they complement really any dish! I love them on my burrito bowls! Did you know onion have many antioxidants, help with blood sugar levels, help with digestive health and anti-inflammatory properties? The list goes on. They're good and good for you.



What You'll Need:

• 1 red onion

• 1-2 cups distilled white vinegar (or enough to cover your onion completely)

• 2 tbsp honey (per cup of vinegar)

• 2 tbsp salt


How to:

≥≥ Slice your onion into thin strips. I do this by cutting my onion in half hamburger style (roots on each end, slice in between them). Place them into a sealable container that has enough space for liquid and the onions.


≥≥ In a sauce pan, bring to a very light boil/simmer your vinegar, honey & salt.


≥≥ Pour the hot liquid over your onions. Stir to combine. Put the lid on and get them into the fridge for at least 1-2 hours. The longer they sit, the better they will be!


Enjoy in the fridge for 1-2 weeks!
