These gluten free grain bowls are so delicious and especially great for nourishing your body when you need the extra push. I love to make these when I might not have been eating then best (hi cheese & chips galore!). These power bowls are full of flavor and textures that all pair so well together. You can go meat or no meat on these: grilled steak or roasted chicken are great accompaniments but not necessary if vegetarian is more your vibe.
As always, bowl recipes are so customizable based on your liking! These inclusions are suggestions that I think pair phenomenal together, but if an ingredient or two isn't to your liking - switch it up!
What You'll Need:
• 1 cup brown rice
• 2 cups chicken bone broth (water or beef stock is great too)
• 1 sweet potato
• 3 cups brussel sprouts
• 1 avocado
• Red Onion, sliced thin
• Roasted Red Pepper
• 1 tsp onion powder
• 1 tsp smoked paprika
• Avocado Oil
• Salt & Pepper
• Protein of choice
• Chimichurri Sauce (see my recipe)
How to:
≥≥ In a pot, use about one tablespoon of avocado oil and toast your rice for a few minutes until pouring in your bone broth, salt and pepper. Cover the rice and let cook according to your package instructions.
≥≥ Dice up your sweet potato into even-ish cubes about 1inch or smaller. Set aside. Wash and clean your Brussels. Remove any wilting pieces from the outside and cut them in half. In a cast iron pan on the stove or in the oven, roast your sweet potato. When it's about halfway done - add in your Brussels cut side down to create some browning. Leave them both alone to make sure they are getting toasty and not steamed! We do not want steamed Brussels here, trust me! Once they're done sprinkle with salt, pepper, and your onion powder and smoked paprika.
