Oh I love this one so much! The brightness of the pomegranate seeds and heartiness of the roasted walnuts pair so well with it all! The Honey Mustard Vinaigrette is an easy and quick homemade salad dressing that you can use on many different salads. This salad dish is delish by itself or paired with your favorite protein, like grilled chicken or steak. There are few things I think are better pre-cut at the store and pomegranates and butternut squash are two of them and included in this recipe! You'll definitely save yourself some time (and sanity) with pre-cut pomegranate seeds and butternut squash if your store offers them. I find mine at Sprouts.
What You'll Need:
• 1 to 1/2 head kale (depending on how much salad you'd like)
• 1/2 cup walnuts, chopped
• 1/4 sweet onion, sliced thin
• 1/3 cup pomegranate seeds
• 2-3 cups butternut squash, cubed
• 1 tsp smoked paprika
• 1 tsp onion powder
• Salt & pepper
• 1 tbsp whole grain mustard
• 1 tbsp yellow mustard
• 2 tbsp honey
• 2 tbsp red wine vinegar
• 1/2 tsp red pepper flakes
• 4 tbsp olive oil, high quality is best
How To:
≥≥ Wash and dry your kale thoroughly. Remove the stems, so you just have the leaves and chop into thin strips so everything is bite sized. Kale is best once it's massaged (yes it's a little bit of a diva leaf!) so add a drizzle of olive oil or lemon juice and massage into the kale.
≥≥ In a pan, roast your butternut squash til it's lightly browned. Add in your chopped walnuts, smoked paprika, onion powder and salt and pepper to taste.
≥≥ In a bowl, add in your kale, butternut squash and walnuts mixture, pomegranate seeds and toss a little of your dressing in there. Start small on the dressing you can always add more. Mix together.
