This delicious dip is so quick to make, no cooking skills required! It's full of flavor and the perfect starter to any meal. It's not only a great dip for crackers, bread, and veggies, but also makes a delicious spread on a good 'ol Italian sandwich. This dip is a part of my 7 days of Valentine's Recipes. Where by the end you'll have 7 recipes to make a complete Valentine's meal that can be served together as a cohesive meal, served family style, as courses or they can be made individually and stand alone.
What You'll Need:
• 8 oz of feta (1 solid block)
• 1 cup roasted red pepper (I use the jarred kind)
• 3-4 tbsp juice from red pepper jar or water
• Small handful of fresh basil
• 1 tsp smoked paprika
• 1 tsp dried oregano
• 1 tps onion powder
• 1/2 tsp red pepper flakes
• 1/2 cup freshly shredded Parmesan
• 1/4 cup olive oil
• 2 oz cream cheese
• 1/2 lemon, juiced
• Gluten free bread
• Garlic Salt
• Salt & pepper to taste
• Parsley for garnish, if desired
How To:
≥≥ In a blender or food processor, add in all of your ingredients (except the bread). Blend and puree until completely smooth. It should be thick like a dip, but smooth like butter. I use my Vitamix, to get it completely smooth. If it's too runny, you can throw it into the fridge and it will set up some more.
≥≥ Turn your oven on broil. On a baking, sheet place your sliced bread (I use gluten free baguette) and top with some olive oil, garlic salt & pepper. Place into the oven for just a few minutes, watch carefully so it doesn't burn. You want it nice and toasty, golden brown.
≥≥ Pour your dip into a bowl and top with finely chopped fresh parsley and serve with your crostini!
