SALMON PATTIES

This is one of my favorite high protein meals that is packed full of flavor! They're quick to make and a great meal prep option for the week. Safe Catch Foods is my favorite brand of packaged salmon, hands down. Each salmon patty is roughly 25 grams of protein. I love them topped with a simple lemon aioli and hot sauce. Roughly one packet of salmon makes one patty.
What You'll Need:
• 4-6 packages of salmon
• 1/4 cup red bell pepper, diced
• 1/4 cup green bell pepper, diced
• 1/4 cup green onions, chopped
• 1 tbsp mustard
• 2-3 tbsp mayo
• 1 egg
• 1/4 cup gluten free breadcrumbs
• 1 tsp oregano
• 1 tsp smoked paprika
• 1 tsp onion powder
• Salt & pepper to taste
• Avocado Oil
How To:
≥≥ Drain your salmon packages if they need it (some don't), and pour into a bowl. Add in your chopped red bell pepper, green bell pepper, green onion, mustard, mayo, and egg. Give it a good mix, making sure to break up the clumped salmon. So everything gets flavorful! Add in your spiced and gluten free bread crumbs and mix one more time.
≥≥ Form patties with your hands and place into a medium hot skilled with some avocado oil. You want them to cook for at least 5-7 minutes on one side to form a "crust" and allow the salmon patties to hold together. Flip over and repeat. You'll know they're done when they hold together.
≥≥ Top with aioli and hot sauce, if desired.
