SHRIMP AND NOODLE STIR FRY



There's one thing I just won't say no to and that's noodles. And then you serve them as asian noodle stir fry? I'm so in! I love all the veggies packed into this one that are good and good for you! Another bonus: the sauce is so customizable as far as sweet and heat goes - feel free to add more honey if you like it sweeter or more garlic chili paste if you want more of a kick. This is a great weeknight meal!



What You'll Need:

• 1 package gluten free noodles

• 1 lb raw shrimp, peeled and deveined

• 1/2 cup shredded carrots

• 1 small head broccoli

• 1 can bamboo shoots

• 5 green onion

• 1/2 can baby corn

• 1 tbsp butter

• Avocado Oil


For the sauce:

• 1/4 cup Tamari or gluten free soy sauce

• 2 tbsp rice vinegar

• 2 tbsp honey

• 1/2 tbsp sesame oil

• 1 tbsp garlic chili paste

• 2 tbsp corn starch and 2 tbsp water (slurry)


How To:

≥≥ Combine your sauce ingredients in a bowl, minus the slurry mixture. Let it sit together for a bit.


≥≥ Wash and chop your veggies. We're going to leave the shredded carrots as is. And then chop the broccoli, you'll want the broccoli to be bite size. Cut the baby corn in half. Leave the bamboo shoots as is. Dice up the green onion.


≥≥ Salt your boiling water and boil the noodles according to package instructions. Don't cook all the way - leave them al dente - they will continue cooking with the veggies and sauce in a bit.


≥≥ In a pan, on medium high heat, heat up some avocado oil and throw in your veggies. Give them a toasty color and turn the heat to low. You want them to still have a crunch to them. We definitely don't want soggy vegetables.


≥≥ In a cast iron or pan, heat up your butter and sear your shrimp on each side until cooked through. Roughly 2-3 minutes per side or until shrimp reaching 120º F internally.


≥≥ Remove your veggies or use a separate pan and add in your sauce mixture and bring to a slow boil. Once boiling, add in your corn starch slurry and stir until it thickens a bit into a sauce. Add in your veggies, shrimp and noodles. Stir and mix up. Let cook for a few minutes until everything is heated through and combined.


≥≥ Serve with toasted sesame seeds!
