I'll eat potatoes in any form but mashed potatoes are top tier! And my smoked black pepper white cheddar & chive mashed potatoes just can't be beat! They're a meal on its own, they're so good. Tillamook Cheese is the star of the show in this recipe! I took a tour of their farm and plant in Oregon this summer with my dad, and it was such a cool experience! Highly recommend if you're a foodie and up in northwestern Oregon! These mashed potatoes are easy to make and taste fancy! I used these on my Turkey Shepherds Pie, but they would also go great with steak night or just in a bowl with a spoon :)
What You'll Need:
• 2 russet potatoes
• 2 cloves garlic, crushed
• 2 tbsp butter
• 1/4 cup sour cream
• 1 cup Tillamook Smoked Black Pepper White Cheddar, shredded
• 1/2 cup fresh shredded Parmesan
• Chives, chopped
• Equal parts chicken bone broth and water
• Garlic Salt & pepper
How To:
≥≥ Peel and dice your russet potatoes. My mom has always said for mashed potatoes the size of the dice doesn't matter, it's just how quick you want them to cook so I tend to do them on the smaller side of a dice, but not too small.
≥≥ In a pot, add in your potatoes and equal parts chicken bone broth and filtered water until the potatoes are just covered in liquid. Add in your crushed garlic, garlic salt and pepper. Cover and bring to a boil.
≥≥ Once you can stick a fork easily through the potatoes, they are done. Typically about 15-20 minutes or so depending on the size of your dice. Save about a half cup of the starchy boiled liquid from the potatoes in your mixing bowl and drain the rest. Add in your drained potatoes.
≥≥ Add in your butter and sour cream. Whip the potatoes up, trying to get out the lumps. If they need to be thinned out a little, add in just a splash more of chicken bone broth. Add in your shredded cheeses and mix again. Don't over mix or else you'll have mashed potatoes that feel like sticky glue! Salt and pepper additionally if needed. Add in some chopped chives, top with extra cracked black pepper and serve!
