THAI PINEAPPLE FRIED RICE



Being gluten free, 9 times out of 10 rice is a safe dish, but it can be pretty boring. This rice dish is anything BUT boring! I love this fried rice as a side dish or as a meal on its own with some grilled shrimp! Day old rice is key in this recipe. It's a little dried out and harder than fresh rice, which is what makes fried rice the consistency you know and love. If you don't have a chance to make rice the day before or have any leftovers from a different recipe, you can make it a few hours before and pop it in the freezer for a little bit. This one is a little sweet with some heat - it's delish. Another bonus - rice is relatively inexpensive. Grocery store trips have gotten much more pricey and this dish is extremely cost effective! It breaks down to about a $1 per serving - which is a steal! Being gluten free doesn't have to break the bank.



What You'll Need:

• 2 cups day old rice (or cold rice)

• 6 green onions

• 1/2 cup pineapple

• 1/2 cup shredded carrots

• 1 can bamboo shoots

• 2 tbsp avocado oil

• 2 eggs

• 2 tbsp butter

• Gluten free Tamari or Soy Sauce

• 1/2 tsp onion powder

• 1 tbsp sesame oil

• Red pepper flakes or garlic chili paste

• Toasted sesame seeds for garnish


How To:

≥≥ Let's chop some veggies! Dice up your green onions, thinly. Chop up your pineapple into small 1/4 inch pieces. Give your bamboo shoots a rough chop or you can leave them whole if you prefer.


≥≥ In a pan on medium heat, heat up 1 tablespoon of avocado oil and toss in your onions, pineapple, bamboo shoots and carrots. After about 5 minutes, push everything to one side of the pan. Heat up another tablespoon of avocado oil and scramble your two eggs directly in the pan. Once they are done, push the eggs over to the side with the veggie mixture.


≥≥ Throw in your two tablespoons of butter and let it melt. Dump in your rice and lightly press the rice down with your spatula. Sprinkle on top, your gluten free soy sauce, onion powder and red pepper flakes. Leave it alone for a few minutes so the magic can happen between the butter and soy sauce! It'll create a caramelized crust on the bottom of the rice. Once it does this - mix everything together and stir fry for a few more minutes until it's sticky and delicious. Drizzle with your sesame oil over the rice in the pan. Mix together one more time and it's ready!


≥≥ Serve and garnish with toasted sesame seeds!
