You don't have to be vegetarian to love this one! It's so good and so filling. Lots of great nutrients and flavors packed into this one. I love the sweet and heat in the sauce plus the crunch of the crispy cauliflower is so delicious. I think you'll really love the chilled Thai slaw that pair so well with this. It's honestly a great slaw recipe to eat by itself! Any gluten free noodles work great here but I like rice noodles or spaghetti noodles!
What You'll Need:
For the Cauliflower & Noodles:
• 1 head cauliflower • 1/2 cup Tamari or gluten free soy sauce
• 2 tbsp rice vinegar
• 1 tsp red curry paste
• 1 tsp ginger paste
• 1 tbsp honey
• 1 tsp toasted sesame oil
• 1 tsp red pepper flakes
• 2 cloves chopped garlic
• 1 egg white
• 1/2 cup arrowroot starch or corn starch
• Gluten Free Noodles
• Sesame Seeds
• Avocado Oil
For the Thai Slaw:
• 1 cup purple cabbage
• 1 cup mango (2 yellow mangos)
• 1/2 red bell pepper
• 1/2 English cucumber
• 2 tbsp rice vinegar
• 1 tbsp honey
• 2 tsp toasted sesame oil
• Salt & Pepper
How To:
≥≥ Let's get the slaw marinating first. Slice or shave your purple cabbage into thin strips. Keep everything relatively the same size by slicing your mango, red bell pepper and cucumber. Add in your vinegar, honey, sesame oil and salt and pepper to taste. Mix it up to combine and let it chill in the fridge.
≥≥ Wash and take the middle core out of your cauliflower head. Cut the cauliflower head into even pieces. In a baggie or bowl, combine the cauliflower, egg white and 1/3 cup of starch. Mix until cauliflower is coated.
≥≥ In a sauce pan, keep the heat off and make your sauce with your Tamari, rice vinegar, curry paste, honey, sesame oil, red pepper flakes and chopped garlic. Stir to combine. Once mixed up, turn on your heat and bring to a slow boil. Use your remaining starch and combine with equal parts water to create a slurry. Pour the slurry into your sauce pan and continue stirring until it has thickened up. If it thickens up too much - add in some more soy sauce or water.
≥≥ Boil your noodles according to package instructions.
≥≥ In a pan, heat up avocado oil. Toss in your starch coated cauliflower and brown up until it's toasted. You don't want your cauliflower to be mushy. Add in your thickened sauce and coat the cauliflower and let cook for a few minutes.
≥≥ Plate it up! Add in your noodles, saucy cauliflower, and the thai slaw. Top with toasted sesame seeds.
