TURKEY SHEPHERDS PIE



I am fully in my comfort food era at the moment. I'm all about hearty food right now. This recipe is made with heart-healthy turkey and your red meat lovers will never know the difference - I promise! It still has all the goodness in this one. For the mashed potatoes, my smoked black pepper and white cheddar mashed potatoes are delish on this recipe! But plain mashed potatoes work great too or your own favorite mashed potato recipe. I don't like peas, so I use green beans in the place of peas and it works so well! I chop the green beans into tiny pieces to resemble peas and voila! This recipe is like a warm hug, honestly.



What You'll Need:

For the Shepherds Pie:

• 1 lb ground turkey, 93/7

• 1 ear charred corn, cut off the cob

• 2 heaping spoonfuls tomato paste

• 1 tbsp Kitchen Bouquet Browning Sauce

• 1 1/2 cups chicken bone broth

• 1 tbsp Worcestershire

• 1 tbsp arrowroot or corn starch + 2 tbsp water (slurry)

• 2 stalks celery

• 2 peeled carrots

• 1/2 sweet onion

• 4 cloves garlic

• 1 cup chopped green beans

• Chives, chopped (for garnish if desired)

• Salt & pepper

• Avocado Oil


For the mashed potatoes:

• 2 russet potatoes

• 2 tbsp butter

• 3 tbsp sour cream

• 2 cloves garlic, peeled and smashed

• Salt & pepper

• Chicken bone broth or milk


How To:

≥≥ Finely dice your celery, carrots, onion, garlic and green beans. You want everything to be very small and around the same size for an even cooking time.


≥≥ Let's make mashed potatoes real quick! Peel and dice your potatoes and get them into a pan with water. Add in your garlic, salt and pepper and boil until you can stick a fork through them where the potatoes are soft but not completely falling apart. Drain the water and add your boiled potatoes to a bowl. Add in your butter, sour cream and more salt and pepper to taste. If they need a little more liquid - add a few splashed of chicken bone broth or milk to loosen them up. You don't want them very runny.


≥≥ In an oven safe pan (I do mine in my cast iron), drizzle a little bit of avocado oil and heat on medium heat the diced onion, celery and carrots. Add in your chopped green beans and garlic. Let those get seared all together. Add in your charred corn and stir to combine. Move to the side in the pan.


≥≥ Preheat your oven to 400º and in the meantime, add in your ground turkey to the pan and start browning. Chop it up into small pieces. Once it's cooked, mix the veggie mixture and meat together. Add in your tomato paste, browning sauce, spices, chicken bone broth, Worcestershire and stir to combine. Once it comes to a light bubble - add in your starch slurry. This will help the sauce to lightly thicken up.


≥≥ Add your mashed potatoes on top. Get it into the oven for 15 minutes or until toasty and everything is bubbling. Top with some fresh chives and serve!
